The NZFSA maintains this website to provide information on the Codex Alimentarius Commission and Codex activities in New Zealand (NZ).

“Codex” is short for CODEX ALIMENTARIUS, an international food standards code developed by the Codex Alimentarius Commission (CAC). The CAC is an international food standards agency that was established jointly by the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) in 1963. The CAC develops standards for use by all member nations. Codex standards are designed to protect the health of consumers and promote fair practices in food trade.


General information about the Codex Alimentarius

Description: 

The Codex Alimentarius is a collection of international food standards that have been adopted by the Codex Alimentarius Commission (CAC).

Codex Standards cover all the main foods, whether processed, semi-processed or raw. In addition, materials used in the further processing of food products are included to the extent necessary for achieving the principal objectives of the code.

Codex provisions concern the hygienic and nutritional quality of food, including microbiological norms, food additives, pesticide and veterinary drug residues, contaminants, labelling and presentation, and methods of sampling and risk analysis.


The U.S. Codex Office

Description: 

The U.S. Codex Office, located in FSIS, USDA, is the U.S. Contact Point for the Codex Alimentarius Commission and its activities. Codex Alimentarius is the major international mechanism for encouraging fair international trade in food while promoting the health and economic interest of consumers.

The Codex Alimentarius Commission

Description: 

The Codex Alimentarius Commission was created in 1963 by FAO and WHO to develop food standards, guidelines and related texts such as codes of practice under the Joint FAO/WHO Food Standards Programme. The main purposes of this Programme are protecting health of the consumers and ensuring fair trade practices in the food trade, and promoting coordination of all food standards work undertaken by international governmental and non-governmental organizations.
